Kingsford wanted a fresh take on a barbecue travelogue series. The 3 biggies (Texas, Memphis, and Kansas City) always grab the headlines and felt totally played out.  Digging into the research, I discovered that North and South Carolina have a not-so-well-known food feud going back generations:  Ketchup sauce vs Mustard sauce! This culinary Civil War would provide an exciting and original throughline.  So I conceived a series that heads off the beaten path to the Carolinas.
